Apple Blondie

Apple Blondies are a softer version of the standard blondie. Lots of apples give them moisture and sweetness for a softer blondie but one that will still stay together.  It’s hard to improve on a blondie but adding apples is never a bad idea. Great for a snack but sweet enough for dessert. 




  1. Preheat the oven to 350º and prepare an 8×8 baking pan with parchment paper and non-stick cooking spray.
  2. Toast the pecans and set aside. Peel, and dice apples, set aside.
  3. Cream the butter and sugar together and mix with electric mixer. Add the egg and mix well.
  4. In another bowl, whisk the flour, baking powder, salt and cinnamon together. Gradually mix the dry ingredients into the wet ingredients. Once combined, stir in the chopped apples and toasted pecans. The mixture will be thick.
  5. Spread the batter into the baking pan and bake for 40-50 minutes or until golden brown and set. Cool and cut into squares.
