Blueberry, Caramel and White Chocolate Cookies

Blueberry, Caramel and White Chocolate Cookies are so delicious, with dried blueberries and sweet caramel bites throughout.  A great cookie for any occasion.




  1. Preheat oven to 350º.
  2. In an electric mixer, beat the butter and sugars until light and fluffy. Beat in eggs and vanilla until well combined.
  3. Place flour, oatmeal, baking soda, and salt into a large bowl. Mix to combine. Add dry ingredients to wet ingredients along with the caramel bits, blueberries and white chocolate. Mix until just combined.
  4. Use an ice cream scoop to scoop out dough onto lined baking sheets. Bake for 9-11 minutes or until edges are just turning golden brown. Remove and let cool for 5 minutes before removing from the pan.
  5. Makes 5 dozen cookies. You can use regular caramels that you have cut into fourths.
