This cheesy cauliflower casserole starts with fresh cauliflower, never frozen, tossed in a tangy sour cream and sharp white cheddar sauce with a touch of smoked paprika. It bakes up bubbly with a golden, cheesy top, the kind of cauliflower cheese casserole that turns skeptics into fans. There’s no canned soup and no heavy cream, just a handful of real ingredients stirred together. From start to finish, it’s ready in about 45 minutes, making it an easy side for a weeknight dinner or a potluck table.

No Canned Soup, No Soggy Cauliflower
Most cauliflower casseroles start with a can of cream of something soup and a bag of frozen florets, and they often turn out watery once they come out of the oven. This one skips both. Fresh cauliflower gets a quick blanch before it goes into a homemade sour cream and sharp cheddar sauce, so the vegetable stays firm instead of turning to mush or pooling liquid in the dish.
A touch of smoked paprika keeps the flavor interesting, which is where a lot of cauliflower casseroles fall flat. It comes out of the oven creamy, cheesy, and holding its shape on the plate, the kind of side dish people ask about before they even taste it.

I’ve made this cauliflower casserole for years now, it’s the dish I reach for anytime someone asks me to bring a side. There’s no last minute testing or crossed fingers, I know exactly how it will turn out because I’ve made it enough times to trust it completely. Even the kids who normally push cauliflower to the edge of their plate ask for more of this one. If you’re looking for another way to win over vegetable skeptics, my broccoli cheese rice casserole does the same trick with a different vegetable.

Why Frozen Cauliflower Never Makes the Cut
I tried frozen cauliflower more than once to save a step, and it turned the whole casserole watery instead of creamy. Fresh cauliflower, blanched briefly and drained well, is what keeps this one firm enough to hold its shape when you cut into it.
Look for a head that’s white and firm, with tightly packed florets and no soft spots or wilted leaves. That’s the cauliflower that will hold up best once it’s baked.
The One Vegetable My Kids Actually Eat
Cauliflower is not an easy sell in my house, but this casserole is the exception that gets requested by name. The cheesy sour cream sauce covers enough of the cauliflower’s usual bite that even skeptics ask for seconds. It helps that the texture comes out creamy and rich rather than soft and bland. If your family likes cauliflower in more forms, my cauliflower pasta bake is another one that wins over doubters.

Tips for the Perfect Cheesy Cauliflower Casserole
- Blanch the cauliflower just until it’s fork tender but not falling apart, about 4 to 5 minutes. Overcooking it before it goes in the oven is the fastest way to end up with mush once it’s baked.
- Drain and dry the cauliflower well after blanching, patting it with a towel if needed. Any extra water left on the florets works its way into the sauce and thins it out.
- Shred your own block of white cheddar instead of using pre-shredded. Pre-shredded cheese is coated to keep it from clumping in the bag, and that same coating keeps it from melting into a smooth, gooey texture.
- This casserole keeps well in the fridge for 3 to 4 days, though I don’t recommend freezing it since the sauce can separate once thawed. It’s a reliable side for potlucks, holidays, or a weeknight dinner, and if you want more ideas to round out the table, my side dish recipes page is worth a look.
Simple Ingredients, Big Cheesy Payoff

How to make Cauliflower Casserole
Step 1: Prepare the cauliflower.
Cut the cauliflower into bite-sized florets. Add the cauliflower florets to boiling water and cook for about 4 minutes. You want the cauliflower to be just slightly softened, not fully cooked. Drain.

Step 2: Make the cheesy filling.

Pour it into a casserole dish.

Step 3: Bake.
Bake at 350°F for 30 minutes or until the top is golden brown.

This cheesy cauliflower casserole is proof that a vegetable side can be just as requested as anything else on the table, simple enough for a Tuesday and good enough to serve to company.

- ½ teaspoon red pepper flakes
Instructions

- Bring salted water to a boil and add the cauliflower florets, cooking for about 4 minutes until just slightly softened. Drain in a colander.
- In a medium bowl stir together the sour cream, paprika, thyme, salt, red pepper flakes and ½ of the cheese.
- Add blanched cauliflower and stir to combine. Add to casserole dish and top with remaining cheese.
- Bake at 350°F for 30 minutes
Barbara’s Tips + Notes
- The top should be deep golden brown and bubbling around the edges before you pull it from the oven, not just melted.
- You can assemble this a day ahead and refrigerate it unbaked, then add 5 to 10 extra minutes to the bake time since it’s starting cold.
- Reheat leftovers in the oven at 350°F rather than the microwave.

My wife is neither a VEGETABLE person nor a CASSEROLE person. After trying this, her comments were, “I like it more than I thought I would.” and later “I’d eat it again!” (Then the earth shook a little as a result of her unusually effusive review.)
My mods if anyone is interested:
– meat from 2 roasted chicken breasts (grocery store deli)
– 1 diced red bell pepper
– about 1/4 c extra sour cream since I was adding so much extra chicken

Eric, that warms my heart! This is a great recipe to convert a non veggie person. Have you tried the Creamy Broccoli Casserole, it might also be a winner. https://www.butterandbaggage.com/broccoli-casserole/ Great suggestion to add chicken, thanks.

I prepared the recipe exactly as stated. The flavor was very good however as with most cauliflower casseroles as soon as I removed it from the oven I tipped the dish to drain all the water out of it.

There is always a little liquid when cooking cauliflower.
