It’s time to send another care package to my college student. I wanted to find something different and interesting, but also something that would transport well. While my girls love Raspberry Cream Cheese Brownies, they are gong to be a gooey mess by the time they get them in the mail. I need something that will stay fresh for a couple of days and will keep its shape. Macadamia and White Chocolate Cookies were just what I was looking. First they are delicious! Macadamia nuts are roasted before adding to this buttery dough adding not only a rich nutty flavor but a crunchy texture. Add some coconut, white chocolate and milk chocolate chips and you have a crunchy buttery cookie that won’t stay around long.
These buttery cookies are great with tea or coffee or a tall glass of milk, the perfect study break for a college student, or special treat after a hard day at work.
Cookies that are easy to ship
When sending a care package in the summer, you need to use a minimum amount of chocolate and avoid cream cheese all together. To package them, first place them in a ziplock and then put the ziplock inside a plastic disposable container. This gives them a bit more protection. Place some newspaper or bubble wrap between the plastic container and the shipping box.

Macadamia and White Chocolate Cookies
Ingredients
- 1 cup flour
- ¾ cup whole wheat flour
- ½ teaspoon baking powder
- ½ teaspoon salted butter
- 10 tablespoons butter room temp
- 1 cup brown sugar
- 2/4 cup sugar
- 1 egg room temp
- 2 teaspoons vanilla
- ¼ teaspoon almond extract
- 1 cup milk chocolate chips
- ¾ cup white chocolate chips or chopped
- ⅔ cup dry roasted macadamia nuts chopped
- 1 cup sweetened coconut or try unsweetened coconut
Instructions
- Preheat oven to 350º. Line pans with parchment paper.
- In a stand mixer, beat together butter, brown sugar and granulated sugar on medium speed until pale and creamy, 5-6 minutes. On low speed, beat in the egg, vanilla and almond extract until well incorporated.
- In a separate bowl, whisk together the flours, baking powder and salt. Add to butter mixture and mix until incorporated. Add remaining ingredients and mix just unit incorporated.
- Using a small ice cream scoop, roll into 1 tablespoon balls and place on cookie sheets. Press down slightly. Bake for 10 minutes until edges are slightly browned. Allow to cool on pans for a couple of minutes and then place on a rack to cool.
