What you'll need

If you haven’t cooked with orzo before, it’s just a rice shaped pasta that works so well in chicken soup  because it absorbs the liquid. The longer it stays in the broth the more it seems to absorb.

What is orzo?

Saute the veggies in a Dutch oven to soften them - start with onions and celery but add any you like. 

Step 1

Add raw chicken and broth; bring it to a boil. Reduce the heat, cover and let it simmer for about 20 min until the chicken has cooked through.

Step 2

Remove the chicken from the pan. Bring the broth to a boil again, add in the orzo and cook until the pasta has cooked 

Step 3

Add your chicken back in, some fresh dill and a squeeze of lemon.  Now enjoy!

Step 4

Serve your soup with a delicious cheesy pull-apart bread.
