Some of your bananas should be mashed, another set chopped.
Fold in your granola, nuts and coconut into the batter.
Use an ice cream scoop to fill the muffin tins.
To get those great tops on your muffins, bake at 425º for 5 min, then turn down the oven to 350º and bake an additional 20 min.
