This is one of those easy recipes you'll turn back to over and over again. This naturally sweet barbecue sauce can be made with fresh or frozen peaches and it adds a ton of flavor to tender pork chops. Make the sauce ahead and the pork chops only take about 15 minutes on the grill—which means dinner is served in no time at all.
1lbpeaches(cut into ½ inch chunks, about 2 large peaches )
1tbspapple cider vinegar
salt and pepper(to taste)
Instructions
Place the pork chops in a ziplock bag or container and cover with buttermilk. Refrigerate overnight or for at least 2 hours. If using frozen peaches, let them thaw completely.
Add oil to a medium saucepan over medium high heat. Add chopped onions and cook until tender, about 3-4 minutes. Add garlic and cook an additional minute. Add ketchup, peach jam and chopped peaches.
Cook over low heat for about 30 minutes until thickened, stirring occasionally. If the peaches are still firm, mash with a potato masher and simmer until they have softened.
Add vinegar and ginger and salt and pepper to taste.
Rinse pork chops and pat dry. Let them sit at room temperature for 30 minutes. Salt and pepper both sides.
Remove some of the sauce to a separate bowl and reserve the rest for serving.
Heat a grill to medium high, 350º to 400º. Brush both sides of the pork chops and place on grill. Cook for 6 minutes,basting periodically. Turn and cook an additional 6 minutes or until a meat thermometer reaches 135º at the thickest part.
Remove from the heat and tent with aluminum foil for 5 minutes to complete cooking. Serve with additional peach sauce.
