Ingredients
2-3lbsbaby back pork ribs
1onion(chopped)
3clovesgarlic(minced)
1orange
1lime
1 ¼cupRufus Teague Honey BBQ sauce
¼cuphoney
1 ½tspapple cider vinegar
½tspdry mustard
¼tspred pepper flakes
Instructions
Remove the thin rib membrane from the underside of the ribs using a dry paper towel. Salt and pepper both sides of the ribs.
Cut into two to three sections depending on the size of the ribs so that you can fit them in a Ziplock bag. Place them in a Ziplock bag along with the onions, garlic, and juice from the orange and lime. Refrigerate overnight.
Preheat the oven to 275º.
Combine all of the sauce ingredients in a saucepan and bring to a boil. Reduce heat and simmer for a minute.
Place the marinated ribs in a roasting pan or a rimmed baking sheet and coat with ½ cup of BBQ sauce. Cover with aluminum foil and bake for 2 ½ hours.
Remove the foil and turn up the oven to 400º. You do not have to wait for it to preheat. Cook uncovered an additional 10-20 miutes or until a meat thermometer reads 190º to 200º or the meat starts separating from the bone.
Remove from the oven and cut the ribs apart for easy serving. Cover with BBQ sauce. Turn on the broiler and place 6-8 inches under the broiler for about 2-3 minutes until the BBQ sauce is bubbly.
Barbara's Notes + Tips
You can cook these ahead of time and wait to put under the broiler until right before serving.
You can use any prepared BBQ sauce or make your own.
Watch the ribs carefully once placed under the broiler. The sauce can quickly burn.
