Potato Chip Toffee Chocolate Chip Cookies for a sweet and salty treat. Potato chips give these soft cookie some crunch.

½cupsemi-sweet chocolate chips
Whisk the flour, baking soda, cornstarch, and salt together in a large bowl. Set aside.
In a medium bowl, whisk the melted butter, brown sugar, and granulated sugar together until no sugar lumps remain. Whisk in the egg, then the egg yolk, and then whisk in the vanilla. Pour the wet ingredients into the dry ingredients and mix together with a large spoon or rubber spatula. Fold in the chocolate chips, potato chips, and toffee pieces. Cover the dough and chill for at least 2 hours.
Remove from refrigerator and let sit at room temperature for 10 minutes. Preheat oven to 325º. Line cookie sheets with parchment paper.
Roll the dough into balls about 2 tablespoons each and place on a cookie sheet. Bake for 11-12 minutes. The cookies will look very soft and under baked. Remove from the oven and allow to cool on the cookie sheet for 10 minutes before moving to a wire rack to cool completely.
