Slow Cooker Pork Tenderloin Recipe with Sweet Potatoes

Ingredients
1(1 ½ lb) pork tenderloin
1apple(chopped)
¼cupbrown sugar
1teaspoonCreole seasoning
¼teaspoonsalt
2sweet potatoes
Instructions
Peel the sweet potatoes and slice into thick 1 inch slices. Place in the bottom of a slow cooker.
Combine the brown sugar and seasoning in a small bowl.
Pound the pork tenderloin until it is ½ inch thick. Cover with chopped apples and sprinkle with a tablespoon of the brown sugar mixture.
Starting at the small end, roll up and place on top of the sweet potatoes. Add any extra apple pieces to the top of the sweet potatoes. Sprinkle the remaining brown sugar mixture over the top.
Cover and cook on low for 4-5 hours. Test at 4 hours with a meat thermometer, it should read 145º.
Remove the pork roll to a cutting board and slice. Serve with the sweet potatoes.
Barbara's Notes + Tips
At the four-hour mark, test the center of the pork with a meat thermometer. Once it reaches 145º, you're all set.
Save the au jus to turn into gravy and serve with mashed potatoes the next day.
