Spiced Apple Muffins with Coconut and Chinese Five Spice
Spiced apple muffins are the perfect breakfast or snack for a crisp fall morning. They’re portable, convenient, and super tasty, with a few ingredients that make them exceptional. This isn’t your average apple muffin recipe – there’s coconut milk in the batter and the glaze and Chinese five spice in the muffins. It offers a subtle flavor that compliments the apples.

Ingredients
MUFFINS
1 ¾cupsflour
1teaspoonbaking soda
1teaspoonbaking powder
1teaspoonAsian five-spice powder
½teaspoonsalt
½cupbutter(room temp)
½cupbrown sugar
¼cupsugar
2eggs
½cupsour cream
2teaspoonsvanilla
¼cupcoconut milk(shaken)
1 ½cupsapples, 1 large or 2 small(peeled and chopped into ½ inch pieces)
TOPPING
⅓cupbrown sugar
1tablespoonsugar
1teaspooncinnamon
¼cupbutter(melted)
½cupflour
¼cupsweetened coconut
GLAZE
½cupconfectioner's sugar
2tablespoonscoconut milk
¼teaspoonvanilla
Instructions
Preheat oven to 425º. Line a 12 cup muffin tip with paper liners.
In a medium bowl, whisk together flour, soda, baking powder, five-spice powder and salt. In the bowl of an electric mixer, cream butter. Add both sugars and beat on high for about 2 minutes. Add eggs, sour cream and vanilla and mix well.
Remove the bowl from the mixer and add the flour mixture. Add coconut milk and stir just until combined, it can be lumpy. Fold in apples and spoon into prepared muffin tin with an ice cream scoop.
For the topping, combine all ingredients and stir with a fork until combined. Sprinkle over the muffins.
Bake for 5 minutes. Without opening the oven door, reduce the temperature to 350º and continue to cook for 10-15 minutes or until a toothpick comes out clean.
Let them cool slightly in the pan while you prepare the glaze,.
Whisk together the ingredients for the glaze and drizzle over the warm muffins. Eat right away or store at room temperature in a sealed container.
Makes 12 muffins.
Barbara's Notes + Tips
You can use whole milk instead of coconut milk.
Chop the apples in large chunks so that you get apple flavor in every bite.
Once you add the flour mixture, stir or fold gently until everything is combined – and a few lumps are absolutely okay.
Letting the muffins cool before adding the glaze.
You can adjust the glaze texture to your preference by using more or less coconut milk.
