A great soup for weeknight dinner

– Pancetta – Onion – Celery – Garlic – Oregano – Red pepper flakes – Anchovy fillets – Diced tomatoes – Cannellini beans – Broth – Pasta – Parsley – Parmesan cheese

Get your Dutch oven out and let's start building this amazing soup.  Let's cook up the pancetta.

Add in your veggies and let them soften then add in the garlic.   

Step 3

Add in the anchovies and seasonings before pouring the tomatoes and cannellini beans. When the parmesan rind is in, let it simmer 10 min.

Step 4

Add the broth, water and pasta, then bring it to a boil and let it cook 10 min to finish. 


I promise, no one will know you added anchovies.  They do add to the depth of flavors you have with this soup.
