CRUST – Flour – Sugar – Fresh basil – Fresh Oregano – Salt – Butter – Apple Cider Vinegar – Cold water – Coarse sea salt


FILLING – Olive oil – Squash  – Salt & Pepper – Butter  – Sugar – Cayenne Pepper – Sweet Onion – Fontina Cheese  – Cold water – Coarse sea salt – Fresh Thyme


Galettes can be served sweet or savory. I love the ease of preparing them and not worrying about a pretty pie crust.

Step 1

Using a food processor, get started pulsing the crust ingredients until a dough begins to form. Place on floured surface and form into a round disk about 1 inch thick and wrap in plastic wrap.

Step 2

Roast the butternut squash that has been diced into small chunks.

Step 3

While the squash is roasting, caramelize the onions with butter, sugar and cayenne pepper.

Mix the onions and squash with cheese and thyme.

Step 4

Assemble the galette with rolling out the dough and placing the filling in the middle. Fold the border over the squash and brush the outside of crust with the cream.

Step 5

Bake at 425º until golden brown, 30-40 minutes. Remove and let stand for 5 minutes before serving.
