– Chicken thighs – Rice Vinegar – Soy sauce – Dried bay leaves – Garlic – Black peppercorns – Brown sugar

Step 1

Time to marinate the chicken. Preferably overnight but a couple of hours will help too. 

Step 2

Save the marinade from the bag and begin to cook the chicken without crowding in a frying pan. 

Add the reserved marinade to the frying pan let it boil then reduce to a simmer to thicken up before adding the chicken back in. 

Step 3

Serve chicken adobo over a bed of rice to help soak up the amazing sauce.
