Acorn squash is really easy to cook though it will take about 50 to 60 minutes. I like to cut off the bottom so that it will sit flat in the pan,

Place in a baking dish with a little bit of water and cover with tin foil. They will be perfectly cooked and not dried out.

Like rice, you can cook it in water, but chicken broth is the key to more flavor soaked in!

Prepare the farro

Combine the cooked ground sausage, sauteed veggies and farro together.

Assemble!

Scoop up the mixture and fill it inside the baked acorn squash. It's ready to serve!
