Sweet Potatoes with Pears

Crispy potatoes go with everything!

This dish is good warm or cold

– sweet potatoes – coconut oil – brown sugar – pears – lemon juice – dried cranberries – pecans – balsamic vinegar – salt, nutmeg

What you'll need

This recipe could be used with apples, but pears bring a unique flavor. I recommend Anjou or Bartlett pears. They hold up well in baking. 

What pears?

Get your oven hot! Then slice up those sweet potatoes.  Did you know there are more than 400 varieties of sweet potatoes??

Step 1

In a sparate bowl, melt some coconut oil and toss the potatoes in it, then add some sugar, salt and nutmeg. 

Step 2

While the potatoes start baking, chop up the pears. Stir the lemon juice into the cut pieces. 

Step 3

Stir the pears, cranberries and pecans into the potatoes. Throw it back in the oven to crisp up for another 15 minutes. 

Step 4

Add a little balsamic vinegar drizzled over the crisp potatoes to balance all the flavors. 

Step 5

You don’t have to peel the potatoes for this recipe.
