Stuffed Acorn Squash

Stuffed with apples, nuts and dried cranberries
Sweetened with honey
Ready in 30 minutes
Scoop out the seeds.
Try using an ice cream scoop to remove the seeds.
Cover with plastic wrap and microwave until soft.
Or roast in oven.
An alternative to the microwave is to bake for 30 minutes
Before stuffing broil.
Place the cooked squash under the broiler for about 2 minutes to brown.
Cook some apples.
Cook until softened then add nuts, dried fruit and spices.
Stuff the squash.
Add filling to cooked squash and top with pistachios and honey.
