If you have a mandolin, this is a great place to use it because you want really thin sliced onions.

Soak your onions in a bowl with buttermilk.

To add cajun spice or not? Cover the onions in flour and shake any excess off.

Let the onions cook slowly in the frying pan.

Lay the onions on a paper towel and salt them lightly.
