Looking for a quick, easy pizza-inspired appetizer idea? Baking mini tortilla pizzas in a 12-cup muffin tin couldn’t be more simple. The secret is in how long you allow the pizza bites to bake! Recipe yields 24 mini tortilla pizzas.

Ingredients
3flour tortillas(8 inch)
12teaspoonstomato sauce
4ouncesmozzarella chese(½ cup grated)
2ouncesparmesan cheese(¼ cup grated)
Instructions
Preheat oven to 425º. Spray two 12 cup muffin tins with non-stick cooking spray
Use a 2 inch biscuit cutter or cut a circle about the size of the bottom of the muffin tin in the tortillas. You can use the lid to the cooking spray. You should get about 8 circles per tortilla. Place each circle into the bottom of the muffin tin.
Top the tortillas with about ½ teaspoon of sauce, whatever topping you like and finish with about a teaspoon of mozzarella and parmesan cheese.
Bake for about 5 minutes, until the cheese is bubbly and they have started to brown slightly.
