Cheesy Breakfast Skillet with Tater Tots and Sausage
Tater tots for breakfast, absolutely! Crispy tater tots cover sausage, mushrooms and cheese with eggs to hold it all together. A fantastic one skillet breakfast that doesn't have to refrigerate overnight. Change up the protein and veggies to make it your own.
In a large bowl, whisk together the eggs, milk, paprika, garlic powder, onion powder, salt and pepper and let sit while you cook the sausage.
Add sausage to a large cast iron or oven proof skillet and cook over medium heat until browned. Remove to a paper towel lined plate with a slotted spoon. Drain all but a tablespoon of grease.
Add the sliced mushrooms to the skillet and cook until softened and brown, about 5 minutes.
Add the sausage back to the skillet and stir with the mushrooms, spreading it evenly over the skillet. Pour the egg mixture over the top.
Place the Tater Tots over the egg mixture. Sprinkle cheese and green onions over the top and bake until a knife inserted in the center comes out mostly clean, about 35-40 minutes. The eggs will continue to cook after removing from the oven.
Barbara's Notes + Tips
You can substitute any cooked meat for the sausage.
Try adding other veggies like green peppers, onions broccoli and cooking them with the mushrooms.
For a Tex-Mex casserole, you can swap out the seasonings in the recipe for an equal amount of taco or fajita seasoning mix.
