While most breakfast casserole recipes have eggs, in this casserole they just hold things together so it’s not like a frittata or omelette, but more like a hash brown casserole. You get all the breakfast staples – potatoes, eggs, meat, veggies and gooey cheese.
Sausage and mushrooms provide tons of flavor, but the best part is the crispy tater tots on top. The bottom half stays creamy from the egg mixture, and the top gets crisp and perfectly golden brown.

Do I need a cast iron skillet?
One of my favorite things about this recipe is that you only need one pan – that is if you have a cast iron skillet or oven proof skillet big enough for all of the ingredients. If you don’t have a cast iron skillet or other pan that can go from the stove to the oven, you can cook all of the ingredients on the stove in whatever pan you have and then assemble the casserole in your favorite casserole dish.
Cast-iron cooks things quicker than a baking dish, so it will need to cook a little longer if making in a glass baking dish.

- Breakfast Sausage: Classic breakfast sausage has a lots of seasoning that adds so much flavor. I’ve also used Italian sausage.
- Mushrooms: Earthy, tender, umami mushrooms add flavor and texture. You can add any vegetables you like, consider bell pepper, onion, zucchini, chopped spinach, or finely chopped broccoli. Just cook them with the mushrooms so that they’re slightly soft when added to the casserole.
- Frozen Tater Tots: Tater tots give this dish its name and distinctive texture. They are found in the freezer section.
- Sharp Cheddar Cheese: Provides ooey-gooey cheesy texture and flavor – it just makes everything better. But any cheese that melts reasonably well could work in this dish. Throw in whatever is in your cheese drawer, Pepper jack, gruyere, Colby or Colby jack are what I typically have on hand.
- Green Onions: Fresh and flavorful green onions add a pop of color and a bright taste to the casserole.

Tips for Making a Potato Breakfast Casserole
- Thoroughly cook the mushrooms and any other vegetables you choose to use before adding them to the casserole.
- If you want your Tater Tots extra crispy, you can place the casserole under the broiler for a few minutes.

Storage Tips
This casserole is best eaten right away, but if you have leftovers you can store then in the fridge for up to 3 days or in an airtight container in the freezer. To get the potatoes crispy again, you will need to reheat in the oven.

Cheesy Breakfast Skillet with Tater Tots and Sausage
Ingredients
- 8 eggs
- 1 cup milk
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon black pepper
- ½ teaspoon salt
- 1 pound breakfast sausage
- 8 oz sliced mushrooms
- 4 cups frozen tater tots
- 4 oz sharp cheddar cheese shredded, about 1 cup
- 2 green onions chopped

Instructions
- Preheat the oven to 375º.
- In a large bowl, whisk together the eggs, milk, paprika, garlic powder, onion powder, salt and pepper and let sit while you cook the sausage.
- Add sausage to a large cast iron or oven proof skillet and cook over medium heat until browned. Remove to a paper towel lined plate with a slotted spoon. Drain all but a tablespoon of grease.
- Add the sliced mushrooms to the skillet and cook until softened and brown, about 5 minutes.
- Add the sausage back to the skillet and stir with the mushrooms, spreading it evenly over the skillet. Pour the egg mixture over the top.
- Place the Tater Tots over the egg mixture. Sprinkle cheese and green onions over the top and bake until a knife inserted in the center comes out mostly clean, about 35-40 minutes. The eggs will continue to cook after removing from the oven.
Barbara’s Tips + Notes
- You can substitute any cooked meat for the sausage.
- Try adding other veggies like green peppers, onions broccoli and cooking them with the mushrooms.
- For a Tex-Mex casserole, you can swap out the seasonings in the recipe for an equal amount of taco or fajita seasoning mix.
