Noodle kugel recipe is one of our family favorites. Slightly sweet from golden raisins and creamy with a vanilla yogurt custard. Great to serve as a side dish, but perfect all by itself. This can be put together quick and easy.

Ingredients
1cupmilk
1cupvanilla yogurt
1cupcottage cheese
3eggs
1tspcinnamon
½cupsugar
8oz.egg noodles(cooked and drained)
1cupgolden raisins
2tablespoonsugar
½tspcinnamon
2tspbutter
Instructions
Preheat oven to 350º. Butter a 9 X 13 baking dish.
In a food processor or blender, combine milk, yogurt, cottage cheese, eggs, 1 tsp cinnamon and ½ cup of sugar until smooth. Pour into a large bowl and combine with cooked egg noodles and raisins. Mix and place in baking dish.
Combine 2 tablespoons of sugar and ½ teaspoon of cinnamon in a small bowl. Sprinkle over the top and dot with butter.
Bake for 50-60 minutes or until pudding is golden brown. Serve warm or room temp. You can also make this in a muffin pan for snack size portions, if so, reduce the cooking time.
Barbara's Notes + Tips
You can make this in a muffin tin, just shorten the cook time.
Instead of a food processor, you can use an emersion blender or a hand mixer.
You can add a half teaspoon of nutmeg to compliment the cinnamon
Because egg noodles cook quickly, cook them a little under the recommended al dente time because you don't want them mushy after baking in the custard.
