Ingredients
2tablespoonsolive oil
1 ¼lbItalian sausage(about 4 sausages)
1onion(chopped)
3clovesgarlic(minced)
1lbmushrooms(sliced)
7cupschicken broth
½teaspoondried thyme
¼teaspoonred pepper flakes
4tablespoonsfresh parsley(chopped)
1 ¾teaspoonssalt
¼lbangel hair pasta
⅛teaspoonpepper
Instructions
In a large pot, heat 1 tablespoon olive oil over moderate heat. Add sausages and cook, turning occasionally, until browned and cooked through, about 10 minutes. Remove. when cool enough to handle, cut into ⅛ inch slices.
In the same pot, add 1 tablespoon oil and add onion and garlic, cook over medium heat, stirring occasionally until the onion is translucent, about 5 minutes. Add mushrooms and cook until golden, 5-10 minutes.
Add broth, seasoning and 2 tablespoons of parsley. Bring to a boil. Reduce heat and simmer, partially covered, for 15 minutes. Stir in the sausages and bring back to a boil. Add pasta, reduce heat and simmer until cooked through, about 3 minutes. Stir in remaining parsley.
