Short Rib Chili

Short ribs braised in beer bring all the flavor!

The slow cooked meat is very tender.

–Beef short ribs –Olive oil –Guiness beer –Fresh rosemary –Onions –Jalapeno –Red bell pepper –Garlic –Chili powder –Cumin –Dried basil –Broth –Canned tomatoes –Tomato paste –Worcestershire sauce –Bay leaves –Red pepper flakes

Step 1

Saute the seasoned short ribs on all sides in a dutch oven. Add beer, rosemary and water. Cover and simmer, cooking until fork tender (about 2 hours).

Step 2

Remove to a cutting board and save the broth (get rid of the grease when it separates!) Shred the meat, removing the excess fat.

Step 3

Add the shredded beef, seasonings and broth and seasoning.  Give it a couple of shakes of salt and pepper to taste.

Step 4

Simmer for about an hour with the cover off so the sauce reduces. 

Step 5

Remove bay leaves before serving. Serve with sour cream, scallions, cilantro, and cheese.
