You have small meatloaf portions

Fantastic marinara

They freeze well

– Olive oil – Onion – Garlic – Balsamic Vinegar – Red wine – Crushed tomatoes – Dried oregano and basil – Fresh Basil



– Eggs – Carrots – Fresh parsley – Dijon Mustard – Worcestershire – Garlic – Oregano – Salt, pepper – Ground chuck – Ground pork – Mozzarella  – Panko

Prepare the marinara by cooking the diced onions in hot olive oil. 

Step 1

Add balsamic vinegar,then add wine and cook down.

Step 2

Add crushed tomatoes and seasoning and simmer until it thickens.

Step 3

Combine eggs, onion, carrot, parsley, mustard, Worcestershire sauce,& seasonings

Step 4

Add the beef, pork, mozzarella, bread crumbs & some marinara sauce.

Step 5

Add to muffin tins & spoon  marinara on top.

Step 6

Alternatively: Place the meat on a rimmed baking sheet and shape into a loaf and brush with marinara.
