Flavored with bacon and chipotle peppers

Mostly corn and a little potato

Tastes like it cooked all day. 

– Bacon – Onions – Garlic – Corn  – Potato – Chipotle chiles – Chicken broth – Whole milk – Sharp cheddar cheese –Cilantro – Green onions

Step 1

Use the saute function on the Instant pot to cook the diced bacon and crisp it up. 

Step 2

Remove the bacon, then saute your potato, veggies and seasonings together, add your broth and set the IP to cook on high for 10 minutes. 

Step 3

Take about half of the soup out and use an immersion blender to cream the veggies together and thicken the soup. 

Step 4

Add milk and cheese, then turn on the saute function and cook until it thickens up.

Garnish with cilantro and green onions!
