Bourbon Tomato Jam Thumbprint Cookies

COOKIES White cheddar cheese Monterey jack cheese grated Jalapeno  Rosemary Butter Salt Sugar Egg Flour Semolina flour


JAM Cherry tomatoes Sugar Red pepper flakes Garlic  Vidalia onion  Cumin Salt Bourbon


In a food processor, grate the cheese, then add the rosemary and jalapeño and pulse until fine.

Step 1

Cream your wet ingredients into a mixing bowl with an electric mixer until smooth. Add the remaining dough ingredients. 

Step 2

Form dough into 1 tablespoon balls and make an indention in the center. I used the back of a melon scoop.

Step 3

Fill each thumb well with Bourbon Tomato Jam. Bake for 20 minutes until they are slightly golden brown.

Step 4

Mix all ingredients except bourbon in a saucepan and bring to a boil. Continue to boil crushing tomatoes with a spoon as they soften. Cook for about 8 -20 minutes until it is thick and syrupy. Remove from the heat and add bourbon. Cool before placing in  cookies.
