    Smokey Pimento Cheese

    Smokey Pimento cheese is a Southern staple that’s hard to beat.  Cream cheese and chipotles transform this into a smokey version that is even better than the original.

    It’s Spring and time for Derby and Graduation parties, even though we are supposed to get below freezing this weekend.  In the South, you can’t have a Spring-time party without pimento cheese. Whether it’s on biscuits or with fresh veggies, it’s a staple around here.  And don’t forget to bring some to your next cook-out, as it’s great on a burger.  Since I’m not a big mayonnaise fan, mine is pretty thick with just a little mayonnaise, and of course mine doesn’t have any pimentos!  

    This version uses chipotle peppers instead and has a nice smokey flavor. If you like goat cheese, then try adding it to pimento cheese.

    Celery is the perfect vehicle for my thick cheese mixture.  If you like yours a little soupier, just increase the mayonnaise.  Along with the mayonnaise, I add cream cheese which again keeps it pretty thick, perfect to top burgers.  This is so easy to make and you will feel Southern just knowing there is home-made pimento cheese in your fridge.  In case you’ve never asked, the deli in your grocery will shred the cheese for you at no charge, at least the ones here will.  That saves so much time. All you have to do is dump in the ingredients and stir.

    For our traditional Kentucky Derby Party, we serve this on biscuits of course.

    Ingredients
     

    • 4 ounces cream cheese room temp
    • ½ cup mayonnaise
    • 2 cups cheddar cheese grated
    • 2 cups white cheddar cheese grated
    • 2 tablespoons chipotle peppers chopped
    Prevent your screen from going dark

    Instructions
     

    • With a hand mixer, beat together the cream cheese and mayonnaise in a large bowl and season with salt and pepper. Add cheese and beat until desired texture is reached. Add chipotle peppers and beat until well combined.
