Try adding goat cheese to your pimento cheese for a creamy dip that’s not only great with crackers but awesome on a burger.
A friend commented that there had not been any appetizer posts recently so we went all out last week for Appetizer Friday. All were amazing and will be shared soon. I will start with goat cheese pimento cheese dip. Natalie loves goat cheese and we are blessed with a local dairy, The Goat Lady Dairy, that we can pick up at the farmers market. I used plain goat cheese but next time I might try some of their other varieties. For the cheddar, I used a smoked cheddar which Natalie hated but Mike and I loved. If you don’t like smoked cheddar then use regular. Using goat cheese gives this a creamy texture that you don’t get with just cheddar. It also just makes this stand out from regular pimento cheese. I actually added pimentos this time, I’m not a big fan and normally leave them out, but I really liked them with the goat cheese.
The texture of this made it great with vegetables, although it was pretty tasty with pita chips. Next time we have burgers, I’m going to make a batch to add to the top. So after taking a break from Appetizer Fridays, we deemed this a winner.

Pimento Goat Cheese Recipe
Ingredients
- 11 ounces goat cheese softened
- 4 ounces smoked cheddar cheese shredded
- ½ cup mayonnaise
- ¼ cup pimientos jarred; drained and chopped
- 2 scallions thinly sliced
- 1 tablespoon sweet pickle relish
- 1 teaspoon onion powder
- 1 teaspoon sriracha
- salt and pepper to taste
Instructions
- Blend ingredients together in a medium bowl with a wooden spoon. Season with salt and pepper.
