    Strawberry Pretzel Crostini

    Strawberry Pretzel Crostini, an appetizer made with fresh strawberries and crunchy pretzel crackers for a sweet salty treat for any occasion.

    Even when strawberries are not in season, if you can find fresh strawberries, try strawberry pretzel crostini.  The other flavors will mask lackluster strawberries. Of course they’re best with fresh strawberries, but we can’t eat bananas and apples all winter!  I discovered these in the peak of strawberry season but made them this weekend in February for Natalies’ vegetarian birthday party dinner.

    Strawberry Crostini Pretzel Crackers

    The strawberries are sweetened with a little brown sugar, and onion adds a savory flavor with basil bringing everything together.  Serve strawberry and cream cheese mixture on a pretzel cracker to get a nice salty taste. The pretzel crackers are also crispier than a regular cracker so they’ll stay fresh longer if they aren’t eaten immediately.  The bright red color makes them a nice touch for the holidays.  The picky teenagers loved them.

    What is a crostini

    A crostini is typically a bite sized piece of bread, toasted with olive oil.  You can put almost anything on a crostini including this strawberry and cream cheese mixture but I like the salty flavor and texture the pretzel cracker adds.

    How do you make strawberry appetizers

    Step 1: Combine chopped strawberries, brown sugar, shallots and basil together.

    Step 2: Right before serving add cream cheese to a cracker and top with strawberry mixture. Serve right away.

    Ingredients
     

    • 36 Pretzel crackers
    • 2 cups strawberries finely chopped
    • ¼ cup fresh basil finely chopped
    • 2 tbsp. dark brown sugar
    • 4 tsp minced shallot
    • pepper
    • 3 oz. cream cheese softened
    Prevent your screen from going dark

    Instructions
     

    • Stir together all ingredients except cream cheese and crackers and let sit for a few minutes for the flavors to blend. Spread cream cheese on crackers and top with strawberry mixture.
