    When taco night meets pasta night, you get the best weeknight dinner, taco spaghetti. Everything cooks together in one pot, soaking up spicy, cheesy flavor that tastes like it took all evening. Perfect for nights when you want something comforting and fast without thinking too hard about it.

    Taco Spaghetti Casserole in 30 Minutes!

    There are nights when I just stare at the fridge and my mind goes blank. That’s when this taco spaghetti recipe saves the day. It’s a little spicy, a little cheesy, and comes together in just one pot. Best part? It’s a meal you can get on the table in under 30 minutes.

    This one pot taco spaghetti recipe is the kind of meal that doesn’t require much. If you’ve got some pasta, ground meat, beef or chicken, and a can of Ro-Tel tomatoes, you’ve got the basics. Everything cooks together, the noodles, the sauce, all of it, you don’t even have to drain the pasta. It cooks right in the liquid in the pot, infusing the pasta with a great taco flavoring.

    While I love spending time in the kitchen experimenting with flavors, that’s not for busy weeknights. I want something fast that still feels like comfort food, simple but not boring. You’ll get that cozy, taco-night flavor with a creamy tomato base that clings to every noodle.

    If you’re tired of pasta dishes, a queso chicken bake is just as simple and you’ll still get those Tex-Mex flavors.

    Add liquid and uncooked pasta.

    Cover and cook.

    Ingredients
     

    • 1 lb ground beef/chicken/turkey
    • 1 1.25 ounce package taco seasoning 4 tablespoons
    • ½ teaspoon ground chipotle pepper
    • 10 ounces Diced tomatoes and green chilies Ro Tel
    • 1 tablespoon tomato paste
    • 8 ounces spaghetti
    • 2 ounces cheddar cheese grated
    • 2 ounces pepper jack cheese grated
    • fresh cilantro

    Instructions
     

    • Cook ground meat of choice in a Dutch oven or large pot over medium high heat until browned, 3-5 minutes. Stir in taco seasoning and ground chipotle.
    • Add tomatoes, tomato paste, uncooked spaghetti and 3 cups of water. Bring to a boil, cover and reduce heat. Simmer until pasta has cooked, about 15 minutes.
    • Remove from heat and sprinkle with cheese and cilantro.

    • Do not drain the liquid from the canned tomatoes, you will need it for the pasta to cook in. 
    • You can use ground beef but ground chicken/turkey are great options also. If using ground beef, you may need to drain the grease before adding the rest of the ingredients.

      Taco spaghetti was a huge hit for our family of 7! It blended two of their favorites and was easy to make and clean up!! The smell of tacos filled the home and they couldn’t believe we were having spaghetti! Definitely adding this entree to our regular rotation!!
