Sometimes the easiest recipes are the ones that stick with you. These little bites were my husband’s favorite growing up, and they’ve remained a go-to in our house for quick snacks or last-minute party trays.
You only need five minutes of prep and five minutes of baking, and suddenly you’ve got a tray full of tangy, salty, cheesy little crisps. Set them out with some zesty chex mix and some creamy raspberry dip your ready for any type of gathering.
Colby Jack is my favorite here because it melts smoothly but still has flavor, though cheddar or almost any cheese works. My husband only will eat them with dill pickles, but bread and butter pickles are my favorite. The red pepper flakes add just the right kick if you want some heat.
They’re fun as a game-day snack, an easy appetizer before dinner, or even a late-night bite when you’re craving something crunchy and briny.

10-Minute Triscuit Appetizers with Dill Pickles and Cheese
Ingredients
- 25 black pepper Triscuits
- 24 dill pickle slices
- 5 ounces Colby Jack cheese sliced
- Red pepper flakes
Instructions
- Preheat the oven to 350º. Line a baking sheet with parchment paper.
- Arrange Triscuits on the baking sheet and place a pickle slice on each one.
- Slice the cheese and cut the slices into squares a little smaller than the Triscuit. Place the cheese slices on top of the pickle and sprinkle with red pepper flakes if desired.
- Bake for 5 minutes until the cheese has melted.
- Serve warm or at room temperature.
