    Pomegranate Crostini

    Crostini with goat cheese, apples and pomegranate are a wonderful appetizer for a cocktail party or just having friends over for drinks. Simple with a bit of a surprise.

    Pomegranate Crostini on dishWe are having friends for dinner next week and I wanted to experiment with an appetizer that I could make in advance since the main dish needs to be prepared right before serving.  After learning how to seed a pomegranate so easily from Carmelita last fall,  I have been searching for ways to use them.

     

    Pomegranate Crostini close-upThis recipe not only uses a pomegranate but it’s slightly spicy, sweet and savory all in 2 bites.  It’s not too messy and you can eat them with your fingers.  You can adjust all the ingredients to your taste, pears might be a good substitute for apples.  Just don’t leave off the honey.  You need it to hold the walnuts and pomegranate on the crostini.  

     

    Pomegranate Crostini on dishThese are so much better than the typical crostini I have made in the past. It could be the garlic or pepper flakes, but my favorite part is the pomegranate on top.

    Pomegranate Crostini

    Ingredients
     

    • baguette sliced into ½ inch pieces
    • olive oil
    • salt and pepper
    • 1 clove garlic
    • goat cheese
    • red chili pepper flakes
    • apple fuji or granny smith, sliced very thin
    • walnuts chopped
    • honey
    • pomegranate

    Instructions
     

    • Preheat oven to broil.
    • Drizzle olive oil over baguette slices and salt and pepper. Place under the broiler for about one minute. Turn over and drizzle more oil and salt and pepper the other side. Broil for another minute until slightly brown. Remove from oven and rub garlic clove on the surface.
    • Slice apple and remove seeds from pomegranate.
    • When baguette slices have slightly cooled, spread each with goat cheese. Sprinkle with red pepper flakes and add a thin slice of apple. Drizzle honey over the top and sprinkle with walnuts and pomegranate. You need enough honey for the nuts and pomegranate to stick to the surface.
