I attended my first food blogging conference recently in Chicago with BlogHer Food. It was amazing to be around so many successful food bloggers. While attending a session put on by one of the sponsors the first morning, I sat across from Katie Webster and learned that she was from Vermont. I don’t think I know anyone from Vermont. She was so interesting to talk to and during our chat, I learned that she had just published a cookbook. I was so excited to hear all about the process. She actually hired expert food testers to try out the recipes, how cool is that. After meeting her, I couldn’t wait to find her cookbook, Maple. They were selling it the following day at the conference and I picked one up and found her later in the lobby and asked her to sign it for me. She was so gracious and didn’t care at all that I was a newbie food blogger.

Chicken with pears are naturally sweetened with pears and maple syrup for a slightly sweet and savory meal the whole family will love.

Ingredients
- 1 shallot , finely sliced
- ¾ cup apple cider
- ½ cup pure maple syrup
- 1 teaspoon fresh ginger
- 1 tablespoon apple cider vinegar
- 1 teaspoon fresh thyme, plus 4 sprigs
- ¾ teaspoon salt
- ½ teaspoon pepepr
- chicken thighs, bone in
- 3 pears, peeled, cored and quartered
Instructions
- In a large ziplock, combine shallot,cider, syrup, ginger, vinegar, thyme, salt and pepper. Add chicken and refrigerate overnight, turning to coat all the pieces.
- Preheat oven to 400º. Place chicken and marinade in a 13 x 9 inch baking dish. Arrange pieces skin side up and place pear quarters around the chicken pieces.
- Bake for 1 hour or until chicken is cooked through, basting occasionally.
- Maple, only slightly adapted.
