    Five Minute Mini Raspberry Tarts

    Thanks to premade tart shells and no cooking needed, these mini raspberry tarts come together in just five minutes and are a great option for special occasions or your weekly brunch. Small enough to pop the whole thing in your mouth (okay, maybe two bites), these mini tarts taste just like raspberry cheesecake.

    ​A Delicious Phyllo Cup Dessert For Any Occasion

    There’s just something magical to a mini treat. Maybe because they’re so cute and dainty, or maybe because it feels like you’re not indulging too much when they’re so small, it’s hard to say!

    What I love about this mini raspberry tart recipe is that they’re so simple and easy to make, but taste so good—just like a mini cheesecake. Plus they keep well and stay fresh if you’re serving for a party. 

    The fresh berries and lime zest add a pop of flavor (and color) to these fun little desserts. I love serving them alongside other bite-size snacks like cucumber tea sandwiches, mini croque monsieurs, and a charcuterie board. Set your party table with candles, gifts, games, and plenty of little treats to wow at your next baby or bridal shower, afternoon tea party, or book club. All that handheld cuteness will be impossible to resist!

      These berry tarts can be made without the use of special tart pans thanks to their small size and the use of frozen phyllo cups, but you could make them in a mini muffin pan for extra stability during the baking process. (You could also use mini pie shells if you prefer, they’d be just as amazing!)

      For a little pop of something extra, add a dash of vanilla extract to your cream cheese and raspberry mixture before assembling. It’ll add a depth of flavor that you’ll absolutely fall for.

      You can top these with any type of berry or even some chopped peaches. Frozen fruit has more liquid so make sure you drain it well before adding. If berries are in season, try a slice of kiwi.

      Phyllo cups save so much time whether you are making phyllo cup desserts, a savory sausage and cheese appetizer, or a mini zucchini quiche for brunch.

      Delicious Raspberry Tartlets That Will Steal Your Heart

      • Creamy Filling – The whipped cream cheese base is fluffy, smooth, and packed with flavor. 
      • Make Ahead – You can make the cream cheese filling ahead of time and store what you don’t use for later. It will last a week in the fridge.

      Ingredients For Mini Raspberry Tarts

      Gather the ingredients.
      • Cream Cheese – Let your cream cheese sit at room temperature until softened, that’ll make it easier to combine with the other ingredients. Or try this Kitchen Hack to get it to room temperature quickly.
      • Powdered Sugar – Powdered sugar is much finer and softer than granulated sugar. In a pinch, you can make your own powdered sugar by running regular sugar through a blender. 
      • Lime – You’ll need the zest and juice of one lime. 
      • Pastry Shell – I recommend frozen mini phyllo pastry shells, but you can use mini pie crust or sheets of puff pastry too. 
      • Fresh Fruit –  You’ll need about 30 raspberries and blackberries, but definitely get some more for snacking!

      Step By Step Instructions For Little Raspberry Tarts

      Step One: Make Filling.

      Add the ingredients to a bowl and mix.

      Cream the ingredients together.

      Combine softened cream cheese, powdered sugar, 1 teaspoon of lime zest, and 1 tablespoon of lime juice in a large bowl. Mix with a hand mixer on medium speed until smooth. You can just mix with a spoon if you don’t have a hand mixer.

      Step Two: Assemble. 

      Add some cream cheese to the phyllo cups, top with a raspberry and sprinkle with lime zest. How easy is that!

      How To Build More Flavor In These Raspberry Tarts

      • Turn these into mini raspberry almond tarts by adding a dash of almond extract to the cream cheese mixture and flaky almond pieces to the top. 
      • ​Add a thin layer of raspberry jam or raspberry preserves before the cream cheese for a surprise!
      • To make these pastries over the top, drizzle a little melted chocolate over the berries as a final touch. 

      How to Store Desserts in Phyllo Cups

      In The Fridge: Store leftover tarts in an airtight container or wrapped in plastic wrap for up to a week. 

      In The Freezer: I don’t recommend freezing these, the texture of the fruit and cream cheese is not the same. Since these are so fast and easy to make, I recommend just making a new batch instead of freezing any leftovers.

      • 8 oz cream cheese softened
      • ½ cup powdered sugar
      • lime zest
      • 1 tbsp fresh lime juice
      • 2 2.1 oz packages frozen mini phyllo cups
      • 30 fresh raspberries and blackberries

      Instructions
       

      • Combine softened cream cheese, powdered sugar, 1 teaspoon of lime zest, and 1 tablespoon of lime juice in a large bowl. Mix with a hand mixer on medium speed until smooth.
