How To Cook Pork Tenderloin In A Crock Pot
Step One: Peel & Prep
Peel the sweet potatoes and slice them into thick 1-inch slices. Place them in the bottom of a slow cooker. You can leave the peelings on, but they’ll come off while cooking and then you have pieces of peeling mixed in, so I like to peel them.

Step Two: Make Spice Mixture
In a small bowl, whisk the brown sugar and spices together.

Step Three: Break Out Your Meat Tenderizer
Pound the pork tenderloin until it is ½-inch thick. Cover with chopped apples and sprinkle with a tablespoon of the brown sugar mixture. You can use a meat hammer, or rolling pin to pound the tenderloin.


Step Four: Assemble In Slow Cooker
Starting at the small end, roll the pork and place it on top of the sweet potatoes. Add any extra apple pieces to the top of the sweet potatoes. Sprinkle the remaining brown sugar mixture over the top.

Step Five: Cover & Cook

I have to say this sounds delicious, and I plan to make it soon. Just dropping a line because I think you have a large typo. Your picture of the pork, does in fact look like a wrapped Tenderloin, but in the recipe the text say’s 11 1/2 pound Tenderloin. Thinking that is a whopper, even for a loin. Maybe 1 1/2 pound? Just a heads up. I’ll let you know how it works out with a smaller Tenderloin. 🙂 As to pears or apples, I like both, so a win win.

Wow, adding the Apple Pie really helped. I cook a Pork Tenderloin at least once a month. Usually grilled, or in the oven. This is the first time I drowned a piece of pork. I have to say I can see more “pork” being done in my crock pot. I actually have some ribs cooking as I type, another first. Anyhow back to the recipe. I did add a bit of cinnamon, just because it marries so well to brown sugar. I put in the Creole seasoning, can’t say that amount made or broke anything, so it could be left out I suppose? This pork was fabulous, plain and simple, a great combo of an Apple pie, and a tenderloin. Glad I tried it. I had some smashed taters, and my Wife cleaned up the sweet potatoes. I like them candied, otherwise not my fav. We both voted this into our regular rotation, and couldn’t be easier to prep, and cook. Give it a try. Barb, thanks for the recipe. It is a winner.
