    You know that one thing at the party that’s gone before you even make it to the table? That’s these sausage balls. No fork, no dipping sauce, no fuss, just crispy, cheesy bites with a little kick and a lot of flavor. I’ve made the classic kind, but these almond flour sausage balls are just as good. A little less doughy, a little more texture, and just as delicious.

    The Snack That Disappears First

    It’s always the small bites that vanish first, isn’t it? Whether it’s a lazy weekend brunch, game-day snack spread, these sausage balls are the first to disappear.

    I’ve made the classic version, the one without Bisquick. But these? These almond flour sausage balls are in another league. Crisp edges, cheesy middles, a little extra texture, and not a hint of sogginess. They’re great straight from the oven, and still tasty once they’ve cooled (which makes them a dream appetizer).

    The Only Ingredients You Actually Need

    Here’s what really matters. Everything else? Check the recipe card at the bottom for full details.

    • Breakfast sausage – Go bold. Neese’s hot sausage is my go-to, but any high-quality breakfast sausage will work.
    • Almond flour – I always use Bob’s Red Mill. Just make sure it’s flour, not almond meal.
    • Cheddar cheese – Freshly grated. Always worth the extra 90 seconds.

    Let’s Make Some Magic

    With only 5 ingredients, Keto sausage balls with almond flour are just as easy to make as regular cheesy sausage balls . You can use a food processor, mixer or your hands.

    Step 1: Toss it all in

    Step 2: Scoop and shape.

    Use a cookie scoop to make even balls.

    Step 3: Bake ’til golden.

    Cook them on a rack to avoid the grease.

    Once baked, let them cool and freeze in a zip-top bag. To reheat, just thaw, sprinkle with a little water, and warm them up in the oven. They’ll taste just as good as the day you made them.

    Keto Sausage Balls with Almond Flour

    Ingredients
     

    • 1 lb Sausage
    • 1 egg
    • 1 cup almond flour
    • 8 ounces cheddar cheese shredded
    • 2 teaspoons baking powder

    Instructions
     

    • Preheat oven to 350º. Line a rimmed baking sheet with parchment and place a wire rack inside.
    • Combine all ingredients in a large bowl. Using your hands, mix well. You can also use a food processor or stand mixer.
    • If using a food processor, grate the cheese first and add almond flour, baking powder and process until combined. Add half of the sausage and process, then add the rest of the sausage and the egg and process until well combined.
    • Using a small ice-cream scoop, form into balls about 11/2 to 2 tablespoons in size.
    • Bake for 18-20 minutes until slightly browned. Remove to wire rack to cool slightly.

    • You can use a food processor, stand mixer, or your hands to combine the ingredients.
    • You a small ice cream scooper to make the balls all the same size. 
    • Use the best quality sausage you can find for less greasy sausage balls.
    • Don’t over bake, take them out as soon as they are slightly browned.

      Just to clarify, I do not cook the sausage up before making them into balls? I make the balls with raw sausage? Thanks!!!

        You are correct, you use raw sausage, it will cook in the oven, good luck.

      I have made these once for when we went camping. They are so delicious. Family and friends love them. We are going camping this weekend and I’ve tripled the recipe. Thanks for sharing. They are fabulous!

      I was surprised at how good these were! Not quite as “biscuit-y” as the bisquick version, but a very good substitute. I was expecting the almond flour to make them grainy, but they weren’t. I made a half batch and added half a block of softened cream cheese. Excellent!

        So glad you like them. If you need some meal ideas, a favorite dish with just 11 carbs is Queso Chicken, or you Cheesy Muffins are a great low carb favorite.

      I like to crumble my sausage and cook it, drain off grease and cool a little, then make sausage balls, they are less greasy this way…also makes sure sausage is cooked enough!

      Super easy in my mixer with the dough hook! Love that there are only 5 ingredients to dump in! I tried the recipe with and without the wire rack in the pan. Less grease with the rack, but hard to clean all the crud off the rack, so I prefer just leaving the rack off and placing them directly in the pan to cook. You do have to cut off the melty cheesey edges since those don’t have a rack to drip through, and layer a thick stack of paper towels to absorb grease, but I think it’s worth not having to clean the wire rack!
      Also – made one batch of original Bisquick recipe and one of these to take to work. My coworkers are every one of these grain-free balls and left most of the Bisquick version! Many commented on how much better these were than the Bisquick version, and several asked for the recipe.
      Have now taken these to 3 different gatherings, and they always get eaten completely! Will be taking to New Year’s party tonight!

      This recipe is FABULOUS! I’ve made it twice. The first time I followed the recipe to the letter. Delicious!
      The second time I added a shake of black pepper and a tablespoon of very finely diced onion. Both times I used Jimmy Dean Breakfast Sausage. This recipe is fast, sooo easy and very tasty. My husband is eating strict LOW carb and loves JD sausage but he also likes foods that are simple without complex flavors. These are tasty cold so extras go in a baggie for those snacks moments.
      (He’s pretty tired of just plane sausage, bacon and eggs.)
      This was a HUGE hit! I’ll be making them many more times! THANK YOU, BARBARA! Your recipe made my husband smile!
      One change I didn’t mention is I had to bake 5-10 minutes longer. We live at 4500 feet.

      I thought these were as good as the ones I make with Bisquick. They did seem a bit dry, but that could have been due to the sausage I used. I may delete a 1/4 cup of the almond flour next time, or add more cheese.
