Spicy Roasted Cauliflower brings out the nutty flavor of cauliflower. A healthy and low carb side dish good with any main dish.

With all the rhubarb bead pudding I have eaten, it’s time to add some healthier foods to my diet. As a disclaimer, I like all vegetables, except for brussel sprouts. I can eat raw cauliflower plain and be perfectly happy. However, that doesn’t mean that I don’t like to jazz up my vegetables a bit. Most vegetables are better roasted and cauliflower is no exception. It brings out the nutty flavor. Roasting it with a spicy srirachi sauce makes this a great healthy side that can make a blah dinner into something a little more exciting. Eating healthy doesn’t have to be boring.
Spicy Roasted Cauliflower
Ingredients
- ⅓ cup olive oil
- 1 teaspoon sesame oil
- ¾ tablespoon soy sauce
- 1 tablespoon rice vinegar
- 3 tablespoon sriracha
- 1 head cauliflower
- cilantro for garnish
Instructions
- Preheat oven to 400º. Line sheet pan with parchment paper.
- In a large bowl, combine all ingredients except the cauliflower. Whisk well. Add cauliflower to the bowl and coat with marinade. Arrange on the prepared pan and roast for 10 minutes. Turn cauliflower and roast an additional 10 minutes.
